Tacos de Papa (Potato Tacos)

I remember my mother making these potato tacos when I was growing up. We loved them And theyre great with mashed potatoes.

Tacos De Papa (Potato Tacos) Ingredients

  • 1 (3.25 ounce) package instant mashed potatoes (such as Idahoan Signature Russets Mashed Potatoes)

  • cup diced onions

  • 1 tablespoon vegetable oil

  • salt and pepper to taste

  • 8 corn tortillas

  • cup vegetable oil for frying, plus more as needed

  • Shredded lettuce

  • Chopped tomatoes

  • 4 tablespoons Shredded Cheddar-Monterey Jack cheese blend

  • Salsa

How to Make Tacos De Papa (Potato Tacos)

  1. Prepare mashed potatoes according to package directions.

  2. Heat oil in a skillet over medium heat. Sautee diced onions in oil until tender and translucent, 3 to 5 minutes. Add cooked mashed potatoes and season with salt and pepper.

  3. Place tortillas on a plate. Heat in microwave until pliable, 15 to 20 seconds.

  4. Place 1/4 cup of potato mixture in each tortilla, fold in half and secure each end with toothpicks.

  5. Heat oil in a skillet until shimmering. Fry each taco until crispy and golden brown, about 1 minute on each side.

  6. Remove toothpicks and top with garnishes.

  • These were great Just like my mom makes them. If anyone else wants to make them, Id like to suggest the perfect homemade salsa for them: tomatoes, dried red chiles, salt, garlic and oregano. Thats it Just boil quickly and blend into a smooth sauce. I think it complements this simple taco perfectly.

  • Loved this I added some onions and peppers to the potatoes for color and taste.

  • This will forever be the leftover mashed potato - next day meal. added sour cream to the toppings with lettuce tomato and store bought salsa.

  • I didnt make this recipe as written. I made real mashed potatoes and mixed in sour cream and bacon. I also added minced garlic to the onions when sauteing (in bacon grease). And I added some cumin and a little chopped up jalapeno into the mashed potato, bacon, onions, cheese mix.But Im rating this recipe at 5 stars because it is a GREAT starting point for a simple dish that can be tweaked a hundred different ways. Mashed potatoes fried in a taco...what a fantastic idea

  • Never thought to use leftover mashed potatoes for tacos....even though I have tried potato tacos at Mexican eateries and loved them I am going to have these for lunch today. You can customize your potatoes and fillings in many ways too
